Steak and Spinach Pinwheels


This was my "New" recipe for the week. I started this last week as part of my New Year's resolutions yet didn't post last weeks recipe....don't worry, I hated it and you're not missing much. Anyhoo, last nights dinner was delicious!

Steak & Spinach Pinwheels
8 slices bacon
1-1.5lb beef flank steak or beef top round steak
1 10 oz package frozen chopped spinach, thawed and well drained
1/4 cup grated Parmesan cheese
Mock Hollandaise sauce (see below)

In large skillet cook bacon till just about done bot not crisp. Drain on paper towels. Score steak by making shallow cuts at 1 inch intervals diagonally across steak in a diamond pattern. Repeat on other side. With meat mallet pound steak into a 12x8 inch rectangle working from center to edges. Sprinkle with salt and pepper and arrange bacon lengthwise. Spread spinach over bacon. Sprinkle with parmesan cheese. Roll up from a short side. Secure with wooden picks at 1 inch intervals starting 1/2 inch from one end. Cut between picks into 8 1inch slices. Place, cut side down, on the unheated rack of a broiler pan. Broil 3 inches from heat for 6 minutes. Turn, broil for 6-8 minutes more for medium doneness. Remove picks and enjoy.

Mock Hollandaise sauce
In a small saucepan combine 1/4 cup dair sour cream, 1/4 cup mayonnaise or salad dressing, 1 tsp lemon juice, and 1/2 tsp prpared mustard. Cook and stir over low heat till hot. Serve with vegetables, poultry, fish or eggs.

The verdict......
The boys loved the meat but none of them were really willing to eat the spinach. I loved the whole thing but would have liked it more with a little garlic salt instead of the salt and pepper. Jared loved it too. I served it with baked potato, salad, and applesauce. I'll definitely make this one again. It was SO easy and quick to make and looks really pretty fancy and impressive. Would be great for a dinner party!

Looks great, we will have to give it a try. like the boys I wouldn't go near spinach as a kid, but spinach and I have reconciled since then.
